What are some good anime series?

I'm trying to discover a new anime series to get into but am having trouble. I really like the more serious animes like Death Note, Code Geass, and Cowboy Bebop. But I guess I do like some of the ones that are a little more kiddish like Bleach and Full Metal Alchemist. Generally though, I'm looking for something along the lines of more serious. Thanks!
